1 large bunch kale into fine strips
2 tbsp. cold pressed rapeseed oil (virgin olive oil can also be used)
3 cloves garlic, finely chopped
2 tbsp. capers, rinsed and chopped
¾ dl. walnuts, coarsely chopped
2-3 dates, diced
Salt and pepper
1 tbsp. balsamic apple or plum vinegar
How it’s done
Heat the oil in a large sauté pan with the garlic. Stir a little and make sure that the garlic doesn’t take colour, as it becomes bitter. Now add capers and dates, and after a few minutes add the cabbage. Stir constantly until the cabbage begins to fall slightly together. Put the lid on, lower the heat slightly and simmer for approx. 5 minutes.
Just before serving add vinegar and walnuts.
